Przygotowanie :
- Schab oprószyć solą i pieprzem
- Rozgrzać dość mocno patelnie, wlać 2 łyżki oliwy i położyć nasze mięso,pieczemy z obu stron po około 5-7 minut
- Schab na jednym z brzegów, ma tłuszcz,dobrze jest go przypiec w tym celu łapiemy go szczypcami i przytrzymujemy na boku
- Po około 15-20 minutach dodajemy masło i ponownie pieczemy, 5-7 minut z każdej strony jednocześnie polewamy go naszym masłem
- W między czasie szykujemy resztę składników, cebule i czosnek drobno kroimy
- Rozrabiamy kostkę bulionową w 150 ml wody
- Nasze kotlety powinny być gotowe, zdejmujemy je z patelni na talerz by odpoczęły i polewamy jeszcze masłem
- Wycieramy patelnie, wlewamy łyżkę oliwy i dodajemy czosnek z cebulą, przypiekamy ciągle mieszając
- Po około 3 -5 minutach wlewamy wino i redukujemy płyn
- Następnie wlewamy bulion i również go trochę redukujemy, wlewamy śmietanę plus 3 łyżki musztardy
- Wszystko mieszamy, zmniejszamy temperaturę i dodajemy nasze kotlety
- Wszytsko redukujemy,by sos był gęsty
- Szparagi ,odłamujemy końcówki, które wyrzucamy
- Kiedy uważamy za nasz sos jest już prawie gotowy, w garnku grzejemy wodę, nie solić gdyż sos jest dość słony, wrzucamy do wrzątku szparagi i gotujemy je około 5 minut w zależności, jakie twardy lubimy

Ingredients:
- Schnitzel – 2 pcs
- Vegetable broth – 150 ml
- Cream – 250 ml
- Dry wine – 50 ml
- Asparagus – 220 g
- Garlic teeth – 3 pcs
- Half an onion
- Coarse mustard – 3 Tablespoons
- Olive oil – 3 Tablespoons
- Butter – 30 g
- salt/Pepper.
Preparation:
- Cover the schnitzels with salt and pepper.
- Heat up a pan, add in two tablespoons of oil and place our meat, bake from both sides for about 5-7 mins.
- Schnitzels tend to have lots of fat on the sides, so using a tong, grab the meat and bake it from the sides.
- After about 15-20 mins we add butter and continute baking, 5-7 on each side at the same time covering the meat with the butter.
- Meanwhile we prepare the rest of the ingredients, onion and garlic we dice finely.
- We add the vegetable broth to about 150 ml of water.
- When our meat is done, we remove it from the pan to let it rest and pouring the melted butter onto them.
- We clean the pan, add a tablespoon of oil, adding onion and garlic, baking while stirring.
- After 3-5 mins we add the wine and reduce.
- After that we add the bouillon and also reduce it, lastly we add the cream and mustard.
- Mix everything together, lower the temp, and add the meat.
- We reduce everything so the sauce is nice and thick
- Snap the ends of the asparagus and throw those away.
- When we think our sauce is ready boil some water (don’t salt it) we cook them for about 5 mins depending on how you like them.
- Place on plate.
